Corner Cupboard & Deli…
If you like to bake or just plain like to eat you’ve got to stop in the Corner Cupboard & Deli. They are located on the corner (Huh! I guess that’s where they got their name…) of 12th Street and Buffalo in downtown Franklin. They have a great selection of unique candies like gummy flies (yes, flies), snacks (cheddar pretzels), cake baking decorations (pearl & silver dragees), spices, dried fruits (pineapple & kiwi), candles, a deli counter (smoked cheese – mmmmm) and so, so much more.
What caught my eye during my visit was the dried kiwi, such a beautiful bright green (see photo above). I’ve never had it before so I had to try it. If you’ve had fresh kiwi you know it isn’t necessarily a sweet flavor, its more of a tart citrusy, just barely ripe strawberry sort of taste, so even dried it isn’t over the top sweet like some dried fruits are. I was thinking about what I could do with it and came up with Tropical Fruit Bark. It turned out pretty good. Here’s what I did: melted 1 whole bag of white chocolate chips and mixed in chopped dried pineapple, dried mango, dried banana chips, dried kiwi and toasted coconut. I just sort of dumped in what I thought looked good. It’s possible I may have added too much stuff (actually I did) but it tastes good. My husband said it looks more like Tropical Fruit Sod instead of Bark (Ever the critic!! …Just kidding, he’s actually a pretty willing taste tester and loving supporter of my food endeavors). Then because it sort of did look like sod I melted a couple of squares I had of White Baking Chocolate and drizzled it over the top. It was poured onto a wax paper lined cookie sheet and popped into the fridge for about 30 minutes to set. Once set it was broken up into pieces to be eaten.
There are so many interesting things to try at the Corner Cupboard & Deli and I haven’t even tried out the deli counter yet. I’ll be back, you can bet on that. Try the cheddar pretzels with a nice frosty cold beer… CHEERS!
