When garlic scapes are out of season, regular garlic finely minced, can be substituted. Fresh basil or rosemary would be a great addition as well. Let your imagination run wild!!
WHITE BEAN DIP WITH GARLIC SCAPES
1/3 C. GARLIC SCAPES (3-4), CHOPPED IN ¼ INCH PIECES
1 TBSP FRESHLY SQUEEZED LEMON JUICE
½ TSP OF SEA SALT (OR MORE TO TASTE)
3-4 SHAKES OF FRANKS RED HOT SAUCE
1 CAN OF CANNELLINI BEANS, DRAINED & RINSED
¼ C. OF EXTRA VIRGIN OLIVE OIL
1-2 TBSP OF WATER
PUT GARLIC SCAPES, BEANS, LEMON JUICE, SALT, HOT SAUCE & 1 TBSP OF WATER IN FOOD PROCESS OR BLENDER. PULSE UNTIL DESIRED CONSISTENCY IS ACHIEVED. WITH MACHINE RUNNING ADD OLIVE OIL SLOWLY. ADD MORE WATER AND SALT IF NEEDED AFTER TASTING. SERVE WITH PITA CHIPS, SLICES OF BAGUETTE OR CELERY & CARROT STIX.
