½ LB. SNOW PEAS, WASHED, ENDS TRIMMED & STRINGS REMOVED
2 TBSP OLIVE OIL
¼ C. PINE NUTS
1 CLOVE OF GARLIC, MINCED
¼ TSP SESAME OIL
10 LARGE MINT LEAVES, CHOPPED
HEAT OLIVE OIL IN A LARGE SKILLET ON MED. HIGH HEAT. ADD SNOW PEAS, GARLIC AND PINE NUTS. STIR CONSTANTLY FOR 1-2 MINUTES. NUTS WILL BEGIN TO LIGHTLY BROWN BUT PEAS SHOULD BE CRUNCHY. REMOVE FROM HEAT, ADD SESAME OIL AND CHOPPED MINT. ENJOY!
