Pepitas are pumpkin seeds without the shell and are a pretty green/olive color.
(serves 4 people)
1 Butternut squash
2 red onions quartered
2oz (approx. 1/4 c.) pumpkin seeds
2 tsps cumin seeds
2 tsps olive oil
Various greens (lettuce, spinach, arugula, young kale, etc.)
Peel and cut squash into small pieces ( about ½ inch square roughly). Put the squash, onions and seeds on a roasting tray, drizzle the oil over and season with salt & pepper to taste.
Cook 40 minutes at 200C (350F). Halfway through jiggle or stir the contents of the pan to ensure even cooking.
Serve on a bed of greens and top with feta cheese if desired.
