On Friday nights I usually have very little energy or creativity to come up with ideas for dinner. Something I’ve been falling back on is pizza made at home. Nothing against carry out or delivery, we do that too sometimes, but did you know that making it homemade is easy and a GREAT way to get rid of leftovers and little bits of this and that in the fridge? Recently I’ve made two pizza with leftovers: BBQ Chicken Pizza and Sausage Fennel Pizza.
BBQ CHICKEN PIZZA:
shred or chop up leftover bbq chicken
sauteed sliced red onions
1/3 c. of whatever bbq sauce you have on hand
chopped golden peppadews – optional (from the olive bar at Giant Eagle)
1 ball of fresh mozzarella, shredded (put in freezer for 30 minutes for easier shredding)
shredded monterey jack & sharp cheddar
1 Mamma Maria brick oven pizza shell (from Giant Eagle) or whatever cooked pizza crust shell
Preheat oven to 425. Spread bbq sauce over shell. Sprinkle with fresh mozzarella. Next, add chicken, red onions and peppadews. Top with a sprinkle of remaining cheeses. Bake on cookie sheet for approx. 12-15 minutes.
SAUSAGE FENNEL PIZZA:
a couple of cooked Hot or Sweet Italian turkey sausages, sliced
small can of tomato sauce (I add a pinch of basil, crushed red pepper & garlic powder)
1/2 a fennel bulb cut vertically in thin strips, sauteed in olive oil until crisp tender
chopped fronds from top of fennel bulbs for top of cooked pizza
2 TBSP chopped fresh basil
1 ball fresh mozzarella, shredded
1/3 c. grated parmesano reggiano
1 Mamma Maria brick oven baked pizza crust (they come in pkgs. of 2)
Preheat oven to 425. Spread sauce on crust. Sprinkle mozzarella cheese evenly over top. Layer sausage and fennel. Top with grated parmesan. Bake for approx. 12-15 minutes. Top with chopped fennel fronds & basil.
Use what you have, add your own or subtract any of the above ingredients. They were delicious combinations but the possibilities are endless. Roasted red pepper or olives would be great on the sausage pizza. Pineapple or bacon are a delicious possibility on the bbq pizza… Go wild!!
