I was looking through some of my cookbooks this morning while drinking my morning tea and found inspiration from Ellie Krieger, another member of the ever growing group of Food Network stars. Ellie’s show is called Healthy Appetite and she cooks delicious food with nutrition in mind. Not necessarily diet food but healthy food. The cookbook I have is called So Easy – Luscious, Healthy Recipes for Every Meal of the Week. We had these homemade potato chips for lunch today with our sandwiches and they were a hit! It took about 5 minutes to get them ready to pop in the oven and about 20 minutes later, VIOLA — fresh, warm, homemade chips!
Recipe adapted from Ellie Krieger’s So Easy – Luscious, Healthy Recipes for Every Meal of the Week
(serves 2 hungry adults)
1 large baking potato, washed, skin left on, sliced on a mandoline 1/8″ thick
1 TBSP extra virgin olive oil
a bunch of freshly ground black pepper
sea salt to taste
Preheat oven to 425. Toss the sliced potatoes in a large bowl with the oil and pepper. Use your hands and make sure all the slices are coated with oil and pepper. Lay the slices out in a single layer on 2 baking sheets. Bake for approx. 20 minutes. Everybodys oven is a little different so trust your nose and check them when you can start smelling them. When they are done they will be lightly browned and crisp. Remove from the oven and sprinkle with sea salt to taste. Grab some quick before they are all gone!
One quick note: ALWAYS use the hand guard with your mandoline. They are VERY sharp and can cut off fingers if you’re not careful. I had a close call once when I was using one without a hand guard. I was lucky — don’t take the risk! Ok, sermon over.
