Haloumi with Lime Viniagrette, Mint, Cucumber & Toasted Pita
(Serves 4 people)
Grated zest and juice of 2 limes
4 tablespoons olive oil
1lb haloumi cheese
8 mini pita breads
bunch of chopped mint leaves
thinly sliced cucumber
Black pepper to taste
Make vinaigrette by whisking together the lime juice and zest with the olive oil and black pepper.
Drain any water from the haloumi (I believe you can find this in the imported cheese section at Giant Eagle or Wegman’s) and pat dry. Cut into slices about ¼ inch thick and lay in frying pan in single layer. Fry over moderate heat until browned on one side. Flip over and brown the other side. Toast pitas in the oven or on the grill.
Arrange haloumi in a dish or in individual dishes. Pour over the lime vinaigretter and scatter with chopped mint. Serve with the pita and cucumber.
