I love to eat but everything in moderation. Ok, sometimes moderation. I usually indulge on the weekends a little more so I thought I might try being good for lunch so I can be bad later. I don’t like fat free products but I do buy low carb tortillas, light sour cream and 2% reduced fat shredded cheese. The quesadillas are delicious and can be made many different ways. This is how I did it (Serves 1):
Saute some red bell pepper, red onion and jalapeno pepper (no seeds) in a little bit of olive oil, salt & pepper to taste. I used approximately 1/4 of a red bell pepper, 1/8 of a medium red onion and 1/2 of a small jalapeno pepper. Once they are soft and carmelized you can layer them with the shredded cheese on two tortillas. Ok, first put down some cheese,
then the sauteed veggies,
Fold the other half of the tortilla over the cheese. Spray a skillet with PAM and heat over medium heat. Use a spatula to carefully lift your yummy bundles of love over to the skillet. It will take about 3 minutes or so on each side to brown the tortilla and melt the cheese. Let them sit for a minute or two before you cut them. Cut them in half and serve with sour cream and salsa. Sometimes I mix the sour cream & salsa together but today I mixed the sour cream with Frank’s Red Hot Sauce. A tasty, cheesy and easy lunch. Try it with refried black beans, green onions, sharp cheddar & pineapple instead of sauteed veggies. ENJOY- I know I’m going to!
