Dad’s Delicious Lamb Chops
Figure on 3 lamb chops per person, trim off most of the fat
MARINADE:
1/2 cup olive oil
1/3 cup lemon juice
1/4 cup finely chopped onion
2 TBL finely snipped parsley
1 TSP salt
3/4 TSP Dried Basil
1/2 TSP Dried Thyme
1/4 TSP Dried Tarragon
Put lamb chops in bag & marinate for 4 to 6 hours.
Heat grill to a medium heat. Cook on grill for 6 – 8 minutes per side depending on how you like them. In warm weather you may want to put them on for less time.
I served them with your brussel sprouts and mushrooms (which was wonderful) and garlic rice.
