Brown Butter Asparagus with Pine Nuts
Adapted from Fast, Fresh & Green by Susie Middleton
1 bunch of asparagus, ends trimmed & spears cut in half on a diagonal
2 TBSP. butter
1/3 c. pine nuts
½ – 1 tsp. fresh lemon juice
freshly ground pepper to taste
Fill a large saucepan with water and add 2 tsp. of salt. Bring to a boil. Add asparagus, cook for 3 minutes. Drain and put on a clean dish towel to dry.
Return saucepan to heat, melt butter over low heat, add pine nuts. Increase heat to medium and cook, stirring constantly, until butter and pine nuts brown. Watch carefully, if butter or pine nuts burn you’ll have to start over.
Remove pan from heat, add asparagus, ¼ tsp of salt, lemon juice and black pepper to taste. Taste and adjust seasoning if necessary.
We served this with boneless chicken breasts stuffed with boursin cheese and sun-dried tomatoes and rice pilaf — YUM!!
