ASIAN PEANUT NOODLES
(serves 4)
8 oz. of cooked linguine, al dente, rinsed under cold water
¼ c. water
3 tbsp maple peanut butter (from Brown’s 100% pure maple syrup products)
1 tsp Sriracha sauce (spicy Asian chili sauce, they have it at Giant Eagle & Walmart)
2 tbsp honey
3 tbsp soy sauce
1 tbsp fresh ginger, grated
3 cloves of garlic, minced
½ tsp sesame oil
Garnishes: green onion, cilantro, chopped peanuts & lime wedges
Heat everything except pasta in a medium sauce pan until peanut butter has melted and everything has mixed together to form a sauce. If it’s too thick add more water 1 tbsp at a time. Remove from heat. While sauce is warm toss in cooked pasta, stirring to coat evenly. To serve: put peanut noodles in individual bowls and top with thinly sliced green onions, chopped fresh cilantro, chopped peanuts and a lime wedge.
