I wrote a post about the benefits of a well-stocked pantry and thought, you know it might be nice to practice what you preach. So tonite we had a heavenly dinner with ingredients found in the pantry and fridge, without having to run to the grocery store — which I do ALOT!
Pasta Arriabbiata w/ Italian Turkey Sausage
(serves 4)
2 TBSP extra virgin olive oil
1 small onion, minced
2-3 garlic cloves, minced
1/2 c. mixed pitted olives, coarsely chopped (I used green & kalamata olives)
2 TBSP drained capers
1/2 tsp sea salt
a big pinch of crushed red pepper flakes
28 oz. can plum tomatoes, pulsed 2-3 times in a food processor OR use a 28 oz. can of crushed tomatoes
2 links of sweet italian turkey sausage, simmered in 1 bottle of beer for about 10 minutes, save liquids
In a large skillet heat olive oil over medium high heat, add garlic and onion, saute until onion starts to get soft. Reduce heat to medium and add, olives, capers, tomatoes, red pepper flakes and salt. Simmer for about 10 minutes. Cut sausage into bite size pieces and add to sauce with remaining simmering liquid. Cook for 10 more minutes. Serve over 1# of rigatoni or penne.
Caesar Salad
(serves 2 hungry adults)
1 clove of garlic, minced and smashed with a little coarse salt
2 anchovy fillets
1 egg yolk
1/2 TBSP dijon mustard
1 lemon, juiced
1 TBSP water
1/4 c. extra virgin olive oil
2 TBSP shredded parmesan reggiano
freshly ground black pepper & sea salt to taste
1 head of romain lettuce, washed & torn into bite size pieces
Put first 6 ingredients into a food processor, process until well mixed, approx. 30 minutes. With processor running add olive oil in a slow stream. Stir in shredded parmesan & black pepper and sea salt to taste. Drizzle over lettuce and toss well (you may not need it all). Serve in individual bowls and top with additional parmesan curls made with a vegetable peeler.
My husband gives this a big thumbs up. It wasn’t hard to make but I did make a fairly big mess in the kitchen. I have to say that I’m an incredibly fortunate gal, my husband gladly cleans up after me and does all the dishes when I cook. I LOVE that about him, and for so many other reasons as well. Look in your pantry and see what you can come up with.
