Meet John Haggerty, the head chef at Lona’s Restaurant in downtown Franklin. John is a graduate of the Pennsylvania Culinary Institute in Pittsburgh. Hunting is a passion for the chef and originally he went to culinary school to be a butcher but one thing led to another and he ended up making his career as a chef. John is married to Lona (of Lona’s Restaurant) and they have three children, one girl and two boys. Here’s a little about John:
1. What do you like to do to relax?
I like to be outside in the fresh air and I like the quiet. Campfire’s are great.
2. What is your ideal vacation?
A cruise. I went on one with a midnight chocolate buffet that took 1,200 man hours to make, with sculptures out of chocolate, and chocolate fountains.
3. Who is your favorite chef?
Guy Fieri
4. What is your favorite ingredient?
I like saffron alot but I don’t cook with it often. I like the taste, smell and color.
5. What is the most memorable meal you’ve ever had?
It was at Carrabba’s Italian Grill in South Carolina with my wife and kids – I had a delicious Chicken Parmesan, it wasn’t fancy but very good. They had a nice atmosphere and it was a great evening.
6. If you could pick anyone in the world to have dinner with who would it be?
Bob Weir, one of my favorite jazz musicians.
7. What do you cook for yourself when you’re not working?
Usually sandwiches, something fast. With 3 kids and a restaurant we are really busy!
8. What 4 items do you always have in your kitchen pantry?
Kosher salt, coarse ground pepper, base flavorings (beef & chicken) for sauces and garlic (I put it in everything).
9. If you were stranded on a deserted island what you need to survive?
A grill, fresh water and definitely Mt. Dew.
10. If you couldn’t be a chef what would you be?
A hunting guide. I love to hunt (bow & gun).
Thanks John for fitting me into your busy schedule. I got the feeling that the chef is a little shy and is not one to brag but I can do it for him. John and Lona have done a great job with the restaurant. It has a really versatile atmosphere, the dining room is tastefully decorated with a half wall separating the bar area from the dining room and if you want to have a beer and watch the game there’s the Celtic Cafe next door and the new Back Bar that can be reserved for private events. Let’s not forget the outdoor patio and live music in the summer time on Fridays. Also, the chef is willing to work with people on their dietary restrictions, so don’t be afraid of making special requests. Bring your family or a bring a date. Come by Lona’s for a good time and a great meal, there’s something for everyone.
