Our featured “Chef” is Jeff Luce of Uptown Bistro on Liberty Street in downtown Franklin. Jeff is not a classically trained chef but is an excellent cook and passionate about all things food. He loves smoking different kinds of meats from whole beef loins to fish, chicken and turkeys. His next mission is to smoke a whole pig in his own homemade smoker. YUM!!!
Here is a little insight on Jeff:
What is your ideal vacation? I love to go camping and my wife and kids love it too.
Who is your favorite chef? Gordon Ramsey (Hell’s Kitchen)
What is your favorite ingredient to cook with? Garlic. Everything I cook has garlic in it.
If you could pick anyone in the world to have dinner with who would it be? Again, Chef Gordon Ramsey, he says whats on his mind.
What is the most memorable meal you’ve ever had? It was the first time I cooked dinner for my wife and her kids. A stir-fry for her and spaghetti for the kids.
What do you cook for yourself when you are not working? Steak on the grill, medium rare.
Omnivore, locavore or herbivore? Omnivore (eats everything!)
What four items do you always have in your kitchen pantry at home? Garlic powder, cajun seasoning, garlic salt and lemon pepper.
What is your least favorite aspect of cooking? Cleaning up. (I have a feeling everyone is going to feel the same way about that, I may need to come up with a new question here)
If you were stranded on a deserted island what 3 kitchen items must you have? Propane griddle, spatula and a knife.
