I had the pleasure of meeting one of Franklin’s own rising star chefs, Asa Seelbaugh, last night. Asa is the chef at The Terrace at The Commons and also a 2000 Franklin High School graduate. He studied his craft at the Pennsylvania Culinary Institute in Pittsburgh and did an internship in Monroeville. His training and experience has enabled him to come up with creative culinary combinations of flavors and textures. Asa, being a chef is a demanding job, what do you like to do to relax?
I’m a huge sports fan. I like to watch sports on TV as well as get outside and play with my 8 yr. old nephew who is good at many sports.
What is your ideal vacation?
Relaxing at the beach. I’ve been to the Outer Banks area many times with my family.
Who is your favorite chef?
Thomas Keller of French Laundry, Napa Valley, CA.
What is your favorite ingredient to cook with?
Tomatoes. I don’t like to eat them by themselves but love them in a sandwich or used in a dish different ways.
What is your most memorable meal you’ve ever had?
In Barcelona, Spain. I had an authentic paella that had shrimp with the heads on, razor clams…(ok now I’m hungry, again!)
If you could pick anyone in the world to have dinner with who would it be?
It’s a toss up between Andy VanSlyke, center fielder for the Pittsburgh Pirates or Anthony Bourdain of No Reservations on the Travel Channel.
What do you cook for yourself when you’re not working?
I don’t really cook for myself often but when I do I like to make spaghetti and meatballs with garlic toast, its comfort food. My Dad used to make it for us when we were kids, he’d spend all day on it.
What 4 items do you have to have in your kitchen pantry?
Garlic, fresh baked breads, butter and artisan cheeses.
If you were stranded on a deserted island what 3 kitchen items would you need?
Pair of tongs, a cast iron skillet or pot and a knife.
If you weren’t a chef what would you be?
An architect.
We are glad that Asa came back to his hometown of Franklin. I personally can’t wait to try more of his delicious and innovative food. Put The Terrace on your list of places to try, you won’t be disappointed!
