		<description><![CDATA[Horseradish Sauce or Creamed Horseradish goes particularly well with Smoked Mackerel or Smoked Trout or Salmon but in the latter use sparingly.

SMOKED MACKEREL PATE

300gr hot smoked mackerel fillets (skinned,deboned and mashed)
50g unsalted butter, softened
3 tbls creamed horseradish( maybe less if using fresh as it is more pungent than the commercial kind)
2 tbls single cream
pepper

Mix all the above and season with the pepper.
Spoon into a serving dish
Cover with cling film and chill until required
Serve with plenty of toast]]></description>

I&#039;ve never found the need to peel burdock, which tastes great after it&#039;s scrubbed. The Japanese probably do it for the color, but after all that digging, I don&#039;t see the necessity of throwing away half your work.
